Mango & Coconut Oatmeal
Tropical oatmeal featuring coconut milk, diced mango, and toasted coconut flakes, enriched with cardamom and a touch of lime zest.
Ingredients
- 1 medium Mango
- 1.5 cups Rolled Oats
- 2 cups Coconut Milk
- 2 tbsp Toasted Coconut Flakes
- to taste Maple Syrup
- 1/4 tsp ground Cardamom
- 1/4 tsp Lime Zest
Instructions
- Peel and dice the mango.
- In a saucepan, combine rolled oats and coconut milk.
- Bring to a boil, then reduce heat and simmer for 5-7 minutes, or until oats are cooked.
- Stir in diced mango, maple syrup, cardamom, and lime zest.
- Top with toasted coconut flakes and serve hot.
