Loaded Vegan Potato Skins

  1. Preheat oven to 220°C. Scrub the potato clean and prick it several times with a fork.
  2. Bake the potato directly on the oven rack for 50-60 minutes, or until it is easily pierced with a fork. Let it cool slightly.
  3. While the potato is baking, finely dice the yellow onion and mince the garlic.
  4. Heat 1 tbsp olive oil in a skillet over medium heat. Add the onion and cook until softened and caramelized, about 8-10 minutes. Add the garlic and cook for another minute until fragrant. Set aside.
  5. Once the potato is cool enough to handle, cut it in half lengthwise. Scoop out most of the potato flesh, leaving about 1/4-inch layer attached to the skin. Be careful not to tear the skin.
  6. In a bowl, mash the scooped-out potato flesh with 1 tbsp olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Mix well.
  7. Fill the potato skins with the mashed potato mixture, then top with the caramelized onion and garlic mixture.
  8. Sprinkle generously with vegan cheddar cheese shreds.
  9. Bake the loaded potato skins for 10-15 minutes, until the cheese is melted and bubbly, and the skins are crispy.
  10. Top with vegan sour cream and fresh chives. Serve immediately.
