Loaded Vegan Potato Skins
Crispy potato skins filled with seasoned potatoes, caramelized onions, garlic, and vegan cheese.
Ingredients
- 1 large Russet Potato
- 1/4 medium Yellow Onion
- 2 cloves Garlic
- 2 tbsp Olive oil
- 1/3 cup Vegan cheddar cheese shreds
- 1/2 tsp Smoked paprika
- 1/4 tsp Garlic powder
- 1/4 tsp Onion powder
- 1/4 tsp Salt
- 1/4 tsp Black pepper
- 2 tbsp Vegan sour cream
- 1 tbsp (chopped) Fresh chives
Instructions
- Preheat oven to 220°C. Scrub the potato clean and prick it several times with a fork.
- Bake the potato directly on the oven rack for 50-60 minutes, or until it is easily pierced with a fork. Let it cool slightly.
- While the potato is baking, finely dice the yellow onion and mince the garlic.
- Heat 1 tbsp olive oil in a skillet over medium heat. Add the onion and cook until softened and caramelized, about 8-10 minutes. Add the garlic and cook for another minute until fragrant. Set aside.
- Once the potato is cool enough to handle, cut it in half lengthwise. Scoop out most of the potato flesh, leaving about 1/4-inch layer attached to the skin. Be careful not to tear the skin.
- In a bowl, mash the scooped-out potato flesh with 1 tbsp olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Mix well.
- Fill the potato skins with the mashed potato mixture, then top with the caramelized onion and garlic mixture.
- Sprinkle generously with vegan cheddar cheese shreds.
- Bake the loaded potato skins for 10-15 minutes, until the cheese is melted and bubbly, and the skins are crispy.
- Top with vegan sour cream and fresh chives. Serve immediately.
