  1. Peel and dice the potatoes and carrots into small, even pieces. This ensures uniform cooking.
  2. Remove chorizo from casing and crumble.
  3. Heat olive oil in a large skillet over medium heat. Add chorizo and cook until browned and slightly crispy, about 5-7 minutes. Drain excess fat.
  4. Add the diced potatoes and carrots to the skillet along with taco or fajita seasoning. Cook until tender, about 15-20 minutes, stirring occasionally. Add a splash of water if the mixture becomes too dry.
  5. Warm the tortillas in a dry skillet or microwave until pliable.
  6. Sprinkle cheese over half of each tortilla, then add a generous scoop of the potato and chorizo mixture.
  7. Fold the tortillas in half and cook in the skillet over medium heat until golden brown and the cheese is melted, about 3-4 minutes per side. Press down gently with a spatula for even browning.
