Loaded Potato & Chorizo Quesadillas (Mexican)
Savory quesadillas filled with a spicy potato and chorizo mixture, perfect for a quick and satisfying family dinner.
Ingredients
- 2 medium (Yukon Gold or Russet recommended) Potatoes
- 1 large Carrots
- 200g (Spanish or Mexican, adjust for spice level) Chorizo sausage
- 6 (6-inch, flour or corn) Tortillas
- 1 cup (Monterey Jack or a Mexican blend are also good) Shredded cheddar cheese
- 2 tbsp Olive oil
- To serve Sour cream (optional)
- To serve (consider a roasted tomato salsa) Salsa (optional)
- 1 tsp Taco or Fajita Seasoning
Instructions
- Peel and dice the potatoes and carrots into small, even pieces. This ensures uniform cooking.
- Remove chorizo from casing and crumble.
- Heat olive oil in a large skillet over medium heat. Add chorizo and cook until browned and slightly crispy, about 5-7 minutes. Drain excess fat.
- Add the diced potatoes and carrots to the skillet along with taco or fajita seasoning. Cook until tender, about 15-20 minutes, stirring occasionally. Add a splash of water if the mixture becomes too dry.
- Warm the tortillas in a dry skillet or microwave until pliable.
- Sprinkle cheese over half of each tortilla, then add a generous scoop of the potato and chorizo mixture.
- Fold the tortillas in half and cook in the skillet over medium heat until golden brown and the cheese is melted, about 3-4 minutes per side. Press down gently with a spatula for even browning.
- Serve immediately with sour cream and salsa, if desired.
