Korean-Inspired Chicken and Potato Stir-Fry

  1. In a large bowl, marinate cubed chicken with 1 tbsp soy sauce, minced garlic, minced ginger and 1 tbsp sesame oil for at least 15 minutes.
  2. In a large skillet or wok, heat remaining sesame oil over medium-high heat.
  3. Add cubed potatoes and stir-fry until they begin to soften, about 5-7 minutes.
  4. Add marinated chicken and stir-fry until chicken is cooked through and potatoes are tender, about 8-10 minutes.
  5. Add sliced onion and stir-fry for another 2 minutes.
  6. In a small bowl, whisk together remaining soy sauce, Korean chili paste, honey, rice vinegar, and a splash of water.
  7. Pour sauce over the chicken and potatoes and stir-fry until everything is well coated, about 2-3 minutes.
  8. Garnish with sesame seeds and green onions.
