Korean-Inspired Chicken and Potato Stir-Fry
A flavorful and spicy chicken and potato stir-fry with Korean chili paste.
Ingredients
- 1.5 lbs Chicken thighs, boneless, skinless, cubed
- 1 lb Potatoes, cubed
- 1 medium Onion, sliced
- 3 cloves Garlic, minced
- 1 tsp Ginger, minced
- 2 tbsp Low-sodium soy sauce
- 2 tbsp Korean chili paste (Gochujang)
- 2 tbsp Sesame oil
- 1 tbsp Honey
- 1 tsp Rice vinegar
- 1 tsp Sesame seeds, for garnish
- 2 Green onions, sliced, for garnish
Instructions
- In a large bowl, marinate cubed chicken with 1 tbsp soy sauce, minced garlic, minced ginger and 1 tbsp sesame oil for at least 15 minutes.
- In a large skillet or wok, heat remaining sesame oil over medium-high heat.
- Add cubed potatoes and stir-fry until they begin to soften, about 5-7 minutes.
- Add marinated chicken and stir-fry until chicken is cooked through and potatoes are tender, about 8-10 minutes.
- Add sliced onion and stir-fry for another 2 minutes.
- In a small bowl, whisk together remaining soy sauce, Korean chili paste, honey, rice vinegar, and a splash of water.
- Pour sauce over the chicken and potatoes and stir-fry until everything is well coated, about 2-3 minutes.
- Garnish with sesame seeds and green onions.
