Korean Ground Beef and Rice Bowl with Quick Kimchi
A quick and delicious Korean-inspired bowl featuring seasoned ground beef, rice, and a quick kimchi slaw.
Ingredients
- 450 g Lean Ground Beef
- 1.5 cups Basmati Rice
- 2 cups, shredded Napa Cabbage
- 2 tbsp Rice Vinegar
- 1 tsp (or to taste) Gochugaru (Korean Chili Flakes)
- 2 tbsp Soy Sauce
- 1 tbsp Brown Sugar
- 1 tbsp Sesame Oil
- 3 cloves, minced Garlic
- 1 tsp, minced Ginger
- 3, sliced Green Onions
- 1 tbsp Sesame Seeds
- To taste Salt
Instructions
- Cook basmati rice according to package directions.
- In a bowl, combine shredded napa cabbage, rice vinegar, gochugaru, and a pinch of salt. Mix well and set aside to marinate while preparing the beef.
- In a bowl, mix soy sauce, brown sugar, sesame oil, minced garlic, and minced ginger.
- Heat a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it up with a spoon.
- Drain any excess fat from the skillet.
- Pour the soy sauce mixture over the beef and stir-fry until the sauce thickens, about 2-3 minutes.
- Serve over steamed rice. Top with the quick kimchi slaw, sliced green onions, and sesame seeds.
