  1. Cook basmati rice according to package directions.
  2. In a bowl, combine shredded napa cabbage, rice vinegar, gochugaru, and a pinch of salt. Mix well and set aside to marinate while preparing the beef.
  3. In a bowl, mix soy sauce, brown sugar, sesame oil, minced garlic, and minced ginger.
  4. Heat a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it up with a spoon.
  5. Drain any excess fat from the skillet.
  6. Pour the soy sauce mixture over the beef and stir-fry until the sauce thickens, about 2-3 minutes.
  7. Serve over steamed rice. Top with the quick kimchi slaw, sliced green onions, and sesame seeds.
