  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add chopped kimchi and diced carrots. Cook until carrots are slightly softened.
  3. Add diced potatoes, cook until almost softened.
  4. Add cooked rice and soy sauce. Stir-fry until heated through.
  5. Stir in Gochujang sauce and green onions
  6. Drizzle with sesame oil and season with salt and pepper.
  7. Top fried rice with Mini Eggs.
