  1. Place eggs in a saucepan, cover with cold water, and bring to a boil. Once boiling, remove from heat, cover, and let sit for 12 minutes.
  2. Drain the hot water and rinse with cold water until the eggs are cool enough to handle. Peel the eggs.
  3. Cut the eggs in half lengthwise and gently remove the yolks into a bowl.
  4. In the bowl with the yolks, mash them with mayonnaise and Dijon mustard until smooth.
  5. Taste and adjust seasonings if desired.
  6. Spoon the yolk mixture back into the egg whites, using a piping bag for a more elegant presentation.
  7. Sprinkle with smoked paprika and serve immediately or chill for later.
