  1. Slice pork thinly against the grain.
  2. In a bowl, mix soy sauce, ginger, mirin, sesame oil, and minced garlic.
  3. Marinate pork in the sauce for at least 15 minutes (or up to a few hours in the refrigerator).
  4. Heat 1 tbsp oil in a skillet over medium-high heat. Pan-fry pork until cooked through and slightly caramelized, about 4-5 minutes.
  5. Serve over cooked rice and sprinkle with sesame seeds and thinly sliced green onions.
