  1. Cook pasta according to package directions until al dente. Reserve about 1 cup of pasta water before draining.
  2. While pasta is cooking, heat olive oil in a large pan over medium heat.
  3. Add minced garlic and red pepper flakes (if using) and cook until fragrant, about 1 minute, being careful not to burn the garlic.
  4. Add crushed tomatoes, dried basil, and dried oregano. Season with salt and pepper.
  5. Bring to a simmer, then reduce heat to low and simmer for 10-15 minutes, stirring occasionally. For a smoother sauce, use an immersion blender to partially blend the sauce.
  6. Drain pasta and add it to the pan with the tomato sauce. Toss to combine. Add some of the reserved pasta water if needed to achieve desired consistency.
  7. Serve immediately, garnished with grated Parmesan cheese and fresh parsley.
