Italian Tomato-Cabbage Soup with Baguettes
A hearty and comforting Italian-inspired soup with tomatoes, cabbage, and aromatic herbs, served with slices of crusty baguette.
Ingredients
- 1/2 medium Green Cabbage
- 680ml Tomato Products
- 1 baguette Baguettes White or Multigrain
- 1 medium Onion
- 2 cloves Garlic
- 2 tbsp Olive Oil
- 1 tsp dried Basil
- 1 tsp dried Oregano
- 1/2 tsp Sugar
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
Instructions
- Shred the cabbage and dice the onion. Mince the garlic.
- Heat olive oil in a large pot over medium heat.
- Add the diced onion and minced garlic and cook until softened.
- Add the shredded cabbage, tomato products, basil, oregano, and sugar. Stir to combine.
- Add water to cover the cabbage, then bring the mixture to a simmer. Reduce heat to low, cover, and cook for 30-35 minutes, or until the cabbage is very tender.
- Season with salt and pepper.
- Slice the baguette and serve alongside the soup.
