Italian Sausage and White Bean Stew
A hearty Italian-inspired stew featuring Italian sausage, white beans, and diced tomatoes, providing a protein-packed and comforting meal.
Ingredients
- 450g Breakfast or Dinner Pork Sausages
- 2 cans (540 mL each) White Beans
- 1 can (796 mL) Canned Diced Tomatoes
- 4 cloves Garlic
- 1 medium Onion
- 1.5 cups Chicken Broth
- 2 tbsp Olive Oil
- 1.5 tsp Italian Seasoning
- 1/2 tsp Dried Oregano
- 1/4 tsp (optional) Red Pepper Flakes
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Add chopped onion and cook until softened, about 5 minutes.
- Add sliced sausage and cook until browned, about 7 minutes, ensuring it's cooked through to a safe internal temperature.
- Stir in minced garlic, canned diced tomatoes (with their juice), and drained and rinsed white beans.
- Pour in chicken broth, add Italian seasoning, dried oregano, and red pepper flakes (if using). Bring to a simmer.
- Reduce heat, cover, and let simmer for at least 30 minutes, or up to an hour, to allow flavors to meld. Stir occasionally.
- Taste and adjust seasoning as needed. Serve hot, garnished with fresh parsley if desired.
