Italian Sausage and White Bean Skillet
A hearty Italian-inspired skillet meal with sausage, white beans, tomatoes, and spinach.
Ingredients
- 450 g Breakfast or Dinner Pork Sausage
- 1 (540 mL) can White beans
- 1 (796 mL) can Diced Tomatoes
- 1 medium, diced Onion
- 3 cloves, minced Garlic
- 2 tbsp Olive oil
- 1 tsp Dried oregano
- 1/4 tsp (optional) Red pepper flakes
- to taste Salt and pepper
- 3 cups Fresh spinach
- 2 tbsp, chopped Fresh parsley
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and cook until softened, about 5 minutes.
- Add minced garlic and sliced sausage. Cook until sausage is browned and slightly crispy, about 8 minutes. If using sausage links, remove casings before cooking.
- Stir in canned diced tomatoes (undrained), drained white beans, dried oregano, red pepper flakes (if using), salt, and pepper.
- Bring to a simmer, reduce heat, and cook for 15 minutes, stirring occasionally, to allow flavors to meld.
- Stir in fresh spinach and cook until wilted, about 2 minutes.
- Stir in fresh parsley just before serving.
- Serve hot.
