Italian Rice Frittata with Sausage & Egg
A hearty Italian-style frittata combining sausage, cheese, and leftover rice bound together with eggs for a satisfying meal.
Ingredients
- 6 large Eggs
- 1.5 cups Cooked Rice
- 200g, removed from casing Italian Sausage
- 1/2, finely chopped Yellow Onion
- 2 cloves, minced Garlic
- 3/4 cup, shredded Mozzarella Cheese
- 3 tbsp, grated Parmesan Cheese
- 2 tbsp, chopped Fresh Basil
- 2 tbsp Olive Oil
- 1/2 tsp Dried Italian Herb Blend
- to taste Salt and Black Pepper
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in an oven-safe skillet (about 10-inch) over medium heat.
- Add Italian sausage, cook, breaking it up with a spoon, until browned. Add yellow onion and cook until softened, about 5 minutes. Add garlic and cook until fragrant, about 1 minute.
- Drain any excess grease from the skillet.
- In a bowl, whisk eggs with salt, pepper, dried Italian herb blend, cooked rice, half of the mozzarella cheese, and half of the Parmesan cheese. Stir in chopped fresh basil.
- Pour the egg mixture evenly over the sausage mixture in the skillet.
- Cook on the stovetop for 5 minutes, then transfer to the preheated oven.
- Bake for 20-25 minutes, or until the frittata is set and golden brown. Sprinkle remaining mozzarella and Parmesan cheese over the top during the last 5 minutes of baking.
- Let cool slightly before slicing and serving.
