  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in an oven-safe skillet (about 10-inch) over medium heat.
  3. Add Italian sausage, cook, breaking it up with a spoon, until browned. Add yellow onion and cook until softened, about 5 minutes. Add garlic and cook until fragrant, about 1 minute.
  4. Drain any excess grease from the skillet.
  5. In a bowl, whisk eggs with salt, pepper, dried Italian herb blend, cooked rice, half of the mozzarella cheese, and half of the Parmesan cheese. Stir in chopped fresh basil.
  6. Pour the egg mixture evenly over the sausage mixture in the skillet.
  7. Cook on the stovetop for 5 minutes, then transfer to the preheated oven.
  8. Bake for 20-25 minutes, or until the frittata is set and golden brown. Sprinkle remaining mozzarella and Parmesan cheese over the top during the last 5 minutes of baking.
  9. Let cool slightly before slicing and serving.
