Italian Rainbow Cookie Bites with Chocolate Drizzle
A colourful Italian almond flavor cookie with chocolate.
Ingredients
- 2 cups Almond Flour
- 1 cup Sugar
- 4 large Eggs
- 1 tsp Vanilla Extract
- 0.5 tsp Almond Extract
- 0.5 cup Butter, softened
- few drops Red Food Coloring
- few drops Green Food Coloring
- 200g, melted Milk Chocolate
- 0.5 cup, melted Semi-sweet chocolate chips
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine almond flour and sugar.
- In a separate bowl, whisk eggs, vanilla extract, and almond extract.
- Add wet ingredients to dry ingredients along with softened butter. Mix well.
- Divide batter into three equal parts. Leave one part plain, add red food coloring to another, and green food coloring to the third.
- Spread each batter into separate greased 8x8 inch baking pans.
- Bake for 25-30 minutes, or until edges are lightly browned. Let cool completely.
- Stack the layers on top of each other, spreading melted milk chocolate between each layer.
- Refrigerate for at least 1 hour to set chocolate.
- Cut into small squares and drizzle with melted semi-sweet chocolate chips before serving.
