Italian Inspired Salmon with Roasted Tomatoes
Fresh salmon fillets seasoned with Italian herbs and roasted alongside juicy vine tomatoes for a flavorful and healthy dinner.
Ingredients
- 3 fillets (1 lb) Salmon Fillet
- 1 lb Tomatoes on the vine
- 2 tbsp Olive Oil
- 1 tbsp Italian herb blend
- 2 cloves, minced Garlic
- 1 tsp Balsamic vinegar
- Pinch Salt
- Pinch Black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Place salmon fillets and tomatoes on a baking sheet.
- Drizzle with olive oil, balsamic vinegar, sprinkle with Italian herb blend, minced garlic, salt, and pepper.
- Bake for 15-20 minutes, or until salmon is cooked through and flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
- Serve hot.
