Italian Inspired Grilled Halloumi Skewers
Halloumi and colorful vegetable skewers marinated in an Italian herb blend, perfect as a light Italian dinner.
Ingredients
- 300g Halloumi Cheese, cubed
- 1 large Red Bell Peppers, cubed
- 1 medium Zucchini, cubed
- 1 medium Yellow Onions, quartered
- 3 tbsp Extra Virgin Olive Oil
- 1 tbsp Italian Herb Blend (dried)
- 3 cloves Garlic, minced
- 1 tbsp Balsamic Vinegar
- To taste Salt
- To taste Black Pepper, freshly ground
Instructions
- In a bowl, whisk together Extra Virgin Olive Oil, Italian herb blend, minced garlic, balsamic vinegar, salt, and freshly ground black pepper.
- Add the cubed halloumi, red bell peppers, zucchini, and yellow onions to the bowl and toss gently to coat evenly. Let marinate for at least 15 minutes, or up to 30 minutes in the refrigerator.
- Thread the halloumi and vegetables onto skewers, alternating ingredients for even cooking.
- Preheat grill to medium-high heat. Ensure the grill grates are clean and lightly oiled to prevent sticking.
- Grill the skewers for about 2-3 minutes per side, turning frequently, until halloumi is golden brown and vegetables are slightly charred and tender.
- Serve hot on a bed of couscous or quinoa. Drizzle with a bit of balsamic glaze or a squeeze of lemon juice for added flavor.
