Italian Baked Egg and Sausage Cups
Individual baked egg cups with chicken sausage, cheese, and herbs for a protein-packed start to the day.
Ingredients
- 1.5 lb Boneless, Skinless Chicken Breast,Club Size
- 6 Large Eggs
- 1 cup shredded Mozzarella Cheese
- 1 tbsp Italian seasoning
- 1/2 tsp Garlic powder
- Pinch Red pepper flakes (optional)
- To taste Salt and pepper
Instructions
- Preheat oven to 375°F (190°C).
- Dice the chicken into small pieces
- Cook the chicken with garlic powder, salt and pepper until no longer pink. Remove from pan and drain any excess fat.
- Grease a muffin tin.
- Divide chicken evenly among the muffin cups.
- Whisk eggs, Italian seasoning, red pepper flakes (if using), salt, and pepper together.
- Pour egg mixture over the chicken in each cup.
- Top with shredded mozzarella cheese.
- Bake for 20-25 minutes, or until eggs are set and cheese is melted and golden brown.
- Let cool slightly before serving.
