Instructions

  1. Preheat oven to 375°F (190°C).
  2. Dice the chicken into small pieces
  3. Cook the chicken with garlic powder, salt and pepper until no longer pink. Remove from pan and drain any excess fat.
  4. Grease a muffin tin.
  5. Divide chicken evenly among the muffin cups.
  6. Whisk eggs, Italian seasoning, red pepper flakes (if using), salt, and pepper together.
  7. Pour egg mixture over the chicken in each cup.
  8. Top with shredded mozzarella cheese.
  9. Bake for 20-25 minutes, or until eggs are set and cheese is melted and golden brown.
  10. Let cool slightly before serving.
