Indian Spiced Lentil Soup with Chicken
A flavorful and protein-rich lentil soup with chicken and aromatic Indian spices.
Ingredients
- 600 g Boneless, skinless chicken breasts
- 1 cup Red lentils
- 1 medium, chopped Onion
- 3 cloves, minced Garlic
- 1 tbsp, grated Ginger
- 6 cups Chicken broth
- 1 tsp Turmeric
- 1 tsp Cumin
- 1 tsp Coriander
- 1/2 tsp Garam masala
- 1/4 tsp (optional) Cayenne pepper
- to taste Salt and pepper
- 1 tbsp Lemon juice
- 2 tbsp, chopped Cilantro
- 2 tbsp Olive oil
Instructions
- Rinse the red lentils until the water runs clear and set aside.
- Dice chicken into small, bite-sized pieces.
- Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion and cook until softened, about 5 minutes.
- Add minced garlic and grated ginger. Cook for 1 minute more until fragrant.
- Stir in the turmeric, cumin, coriander, garam masala, and cayenne pepper (if using). Cook for another minute, stirring constantly.
- Add the rinsed red lentils, chicken broth, and diced chicken. Bring to a boil, then reduce heat to low, cover, and simmer for 30-40 minutes, or until lentils are tender and chicken is cooked through.
- Use an immersion blender to partially blend the soup for a creamier texture (optional).
- Season with salt and pepper to taste. Stir in lemon juice and chopped cilantro.
- Serve hot.
