  1. Rinse the red lentils until the water runs clear and set aside.
  2. Dice chicken into small, bite-sized pieces.
  3. Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion and cook until softened, about 5 minutes.
  4. Add minced garlic and grated ginger. Cook for 1 minute more until fragrant.
  5. Stir in the turmeric, cumin, coriander, garam masala, and cayenne pepper (if using). Cook for another minute, stirring constantly.
  6. Add the rinsed red lentils, chicken broth, and diced chicken. Bring to a boil, then reduce heat to low, cover, and simmer for 30-40 minutes, or until lentils are tender and chicken is cooked through.
  7. Use an immersion blender to partially blend the soup for a creamier texture (optional).
  8. Season with salt and pepper to taste. Stir in lemon juice and chopped cilantro.
  9. Serve hot.
