Hearty Italian Sausage and Bean Soup with Greens

Ingredients
- 1 can (398 mL), undrained Canned Diced Tomatoes
- 1 can (540 mL), drained and rinsed Kidney Beans
- 3 cloves, minced Garlic
- 1 medium, chopped Onion
- 1 medium, diced Carrots
- 1 stalk, diced Celery
- 3 sausages, removed from casing and crumbled Italian Sausage
- 5 cups, low-sodium Chicken Broth
- 1.5 tsp Italian Seasoning
- 2 tbsp Olive Oil
- 2 cups, chopped Fresh Spinach or Kale
- For serving (optional) Grated Parmesan Cheese
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery, cook until softened, about 5 minutes.
- Add Italian sausage and cook, breaking it up with a spoon, until browned.
- Add canned diced tomatoes, kidney beans, chicken broth, and Italian seasoning. Bring to a boil, then reduce heat and simmer for 25-30 minutes, stirring occasionally.
- Stir in fresh spinach or kale during the last 5 minutes of cooking until wilted.
- Serve hot, garnished with grated Parmesan cheese if desired.
