Gochujang Beef Stir-Fry with Rice (Korean)

  1. Cook basmati rice according to package directions.
  2. Slice beef into thin strips against the grain. Marinate the beef strips with 1 tablespoon of soy sauce and black pepper for at least 10 minutes.
  3. In a bowl, whisk together gochujang paste, remaining soy sauce, honey or maple syrup, sesame oil, and minced garlic.
  4. Heat a wok or large skillet over high heat until it's very hot. Add marinated beef in a single layer (work in batches to avoid overcrowding) and stir-fry until browned and cooked through.
  5. Add sliced red bell pepper and stir-fry for another 2-3 minutes until slightly tender-crisp.
  6. Pour the gochujang sauce over the beef and vegetables. Stir-fry until the sauce thickens and coats the beef and vegetables evenly, about 2 minutes.
  7. Serve over steamed rice. Garnish with sliced green onions and toasted sesame seeds.
