Ginger Beef with Bell Peppers

  1. In a bowl, marinate beef slices with 1 tbsp soy sauce and 2 tbsp cornstarch. Set aside for 10 minutes.
  2. In a separate bowl, whisk together remaining soy sauce, rice vinegar, honey, grated ginger, minced garlic and hot sauce.
  3. Heat 2 tbsp vegetable oil in a large wok or skillet over high heat. Add beef and stir-fry until browned and crispy. Remove and set aside.
  4. Add remaining vegetable oil to the wok. Add bell pepper strips and stir-fry until tender-crisp.
  5. Return beef to the wok. Pour in sauce mixture and stir-fry until sauce thickens and coats the beef evenly.
  6. Serve immediately with rice.
