  1. Cut chicken into bite-sized pieces. Marinate with a pinch of salt, pepper and 2 tbsp cornstarch for 10 minutes.
  2. In a bowl, mix 1/4 cup cornstarch with 1/4 cup water to make a slurry.
  3. Fry chicken in batches until golden brown and crispy. Set aside.
  4. In a wok or large skillet, heat 1 tbsp sesame oil over medium heat. Add minced garlic and grated ginger, cook until fragrant.
  5. Whisk together soy sauce, rice vinegar, sugar, cornstarch slurry, and red pepper flakes.
  6. Pour sauce into the wok and bring to a simmer, stirring constantly until slightly thickened.
  7. Add fried chicken to the sauce and toss to coat.
  8. Steam broccoli until tender-crisp.
  9. Serve chicken and broccoli over cooked rice. Garnish with sesame seeds if desired.
