Garlic Potato and Onion Soup
A comforting and creamy potato soup infused with garlic and onion flavors, brightened with a squeeze of lemon, perfect for a chilly day.
Ingredients
- 1 medium Potatoes
- 1/4 medium Onion
- 2 cloves Garlic
- 1.5 cups Vegetable broth
- 1/4 cup Heavy cream
- 1 tbsp Butter
- 1 tsp Lemon Juice
- to taste Salt
- to taste Pepper
Instructions
- Dice the potato and onion. Mince the garlic.
- In a pot, melt butter over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for another minute until fragrant.
- Add diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Use an immersion blender to blend the soup until smooth. Alternatively, carefully transfer the soup to a regular blender.
- Stir in heavy cream, lemon juice, salt, and pepper. Heat through gently (do not boil).
- Serve hot.
