  1. Dice the potato and onion. Mince the garlic.
  2. In a pot, melt butter over medium heat. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and cook for another minute until fragrant.
  4. Add diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  5. Use an immersion blender to blend the soup until smooth. Alternatively, carefully transfer the soup to a regular blender.
  6. Stir in heavy cream, lemon juice, salt, and pepper. Heat through gently (do not boil).
  7. Serve hot.
