Garlic Herb Potato and Onion Focaccia

  1. Preheat oven to 425°F (220°C).
  2. Lightly oil a baking sheet or cast-iron skillet with 1 tbsp olive oil.
  3. Stretch or roll out the focaccia dough to fit the prepared baking sheet. If using store-bought dough, follow package instructions.
  4. In a small bowl, mix 2 tbsp olive oil with the minced garlic, chopped rosemary, and thyme. Season with salt and pepper.
  5. Brush the garlic herb oil evenly over the focaccia dough.
  6. Arrange the thinly sliced potatoes and onions on top of the dough, overlapping slightly.
  7. Sprinkle with sea salt flakes and black pepper.
  8. Bake for 25-30 minutes, or until the focaccia is golden brown and the potatoes are tender. Check the bottom crust to make sure it's cooked through.
  9. Let cool slightly before slicing and serving.
