Garlic Herb Potato and Onion Focaccia
A savory focaccia bread topped with thinly sliced potatoes, caramelized onions, minced garlic, and fresh herbs.
Ingredients
- 1 medium, thinly sliced Potatoes
- 1/2 medium, thinly sliced Onions
- 4 cloves, minced Garlic
- 200g (store-bought or homemade) Focaccia dough
- 3 tbsp Olive oil
- 2 tsp, chopped Fresh rosemary
- 1 tsp, chopped Fresh thyme
- to taste Sea salt flakes
- to taste Black pepper
Instructions
- Preheat oven to 425°F (220°C).
- Lightly oil a baking sheet or cast-iron skillet with 1 tbsp olive oil.
- Stretch or roll out the focaccia dough to fit the prepared baking sheet. If using store-bought dough, follow package instructions.
- In a small bowl, mix 2 tbsp olive oil with the minced garlic, chopped rosemary, and thyme. Season with salt and pepper.
- Brush the garlic herb oil evenly over the focaccia dough.
- Arrange the thinly sliced potatoes and onions on top of the dough, overlapping slightly.
- Sprinkle with sea salt flakes and black pepper.
- Bake for 25-30 minutes, or until the focaccia is golden brown and the potatoes are tender. Check the bottom crust to make sure it's cooked through.
- Let cool slightly before slicing and serving.
