  1. Preheat oven to 190°C (375°F).
  2. Roll out puff pastry on a baking sheet lined with parchment paper.
  3. Score a border about 1 inch from the edge of the pastry with a knife, being careful not to cut all the way through. This will create a raised edge.
  4. Spread Dijon mustard evenly over the pastry inside the scored border.
  5. In a bowl, toss halved cherry tomatoes and blanched broccoli florets with 1 tbsp olive oil, garlic powder, salt, and pepper.
  6. Arrange seasoned vegetables on top of the mustard.
  7. Sprinkle with grated Gruyere cheese.
  8. Brush the edges of the pastry with beaten egg.
  9. Bake for 25-30 minutes, or until pastry is golden brown and cheese is melted and bubbly.
  10. Drizzle with remaining 1 tbsp olive oil and sprinkle with thyme before serving.
