Ingredients
- 10 Large Eggs
- 1.5 cups Good Quality Diced Cooked Ham (e.g., leftover roasted ham)
- 1.5 cups shredded Gruyere Cheese
- 8 oz sliced Mushrooms
- 1, minced Shallot
- 1/2 cup Heavy Cream
- 1 tsp Dijon Mustard (optional, enhances savory notes)
- 2 tbsp chopped Fresh Chives
- 1 tbsp Butter
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
Instructions
- Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
- Melt butter in a skillet over medium heat. Add minced shallot and cook until softened, about 2-3 minutes.
- Add sliced mushrooms and cook, stirring occasionally, until they have released their liquid and started to brown, about 7-10 minutes. This browning develops deep flavor.
- Scatter the diced ham and cooked mushrooms evenly across the bottom of the prepared baking dish.
- Sprinkle 1 cup of the shredded Gruyere cheese over the ham and mushrooms.
- In a large bowl, whisk together eggs, heavy cream, Dijon mustard (if using), salt, and pepper until well combined.
- Pour the egg mixture evenly over the ingredients in the baking dish.
- Sprinkle the remaining 1/2 cup of Gruyere cheese over the top.
- Bake for 30-35 minutes, or until the center is set and the top is golden brown and bubbly.
- Let stand for 5-10 minutes before cutting into squares and serving. Garnish with fresh chives.
