  2. Melt butter in a skillet over medium heat. Add minced shallot and cook until softened, about 2-3 minutes.
  3. Add sliced mushrooms and cook, stirring occasionally, until they have released their liquid and started to brown, about 7-10 minutes. This browning develops deep flavor.
  4. Scatter the diced ham and cooked mushrooms evenly across the bottom of the prepared baking dish.
  5. Sprinkle 1 cup of the shredded Gruyere cheese over the ham and mushrooms.
  6. In a large bowl, whisk together eggs, heavy cream, Dijon mustard (if using), salt, and pepper until well combined.
  7. Pour the egg mixture evenly over the ingredients in the baking dish.
  8. Sprinkle the remaining 1/2 cup of Gruyere cheese over the top.
