French Dark Chocolate Mousse Cups with Sea Salt
Decadent French dark chocolate mousse infused with vanilla and a hint of sea salt, served in elegant cups for a rich and intense flavor experience.
Ingredients
- 170 g Sweet Milk Chocolate
- 3 large Large Eggs (separated)
- 3 tbsp (plus 1 tbsp divided) Granulated Sugar
- 1 cup (240ml) Heavy Cream (cold)
- 1/2 tsp Vanilla Extract
- Pinch Sea Salt Flakes
Instructions
- Melt the dark chocolate in a heatproof bowl set over simmering water, stirring occasionally until smooth. Ensure the bowl doesn't touch the water. Remove from heat and let cool slightly.
- Separate the egg yolks and whites. In a bowl, whisk the egg yolks with 2 tablespoons of sugar until pale and thickened.
- In a separate bowl, beat the heavy cream with the remaining 1 tablespoon of sugar and vanilla extract until stiff peaks form. Be careful not to overwhip.
- In another bowl, beat the egg whites until soft peaks form. Gradually add the remaining 1 tablespoon of sugar and continue beating until stiff, glossy peaks form.
- Gently fold the melted chocolate into the egg yolk mixture in thirds until combined.
- In thirds, fold a spoonful of whipped egg whites into the chocolate mixture, then fold in whipped cream.
- Spoon the mousse into serving glasses or cups.
- Cover and refrigerate for at least 3 hours. Sprinkle with a pinch of sea salt flakes just before serving.
