  1. Melt the dark chocolate in a heatproof bowl set over simmering water, stirring occasionally until smooth. Ensure the bowl doesn't touch the water. Remove from heat and let cool slightly.
  2. Separate the egg yolks and whites. In a bowl, whisk the egg yolks with 2 tablespoons of sugar until pale and thickened.
  3. In a separate bowl, beat the heavy cream with the remaining 1 tablespoon of sugar and vanilla extract until stiff peaks form. Be careful not to overwhip.
  4. In another bowl, beat the egg whites until soft peaks form. Gradually add the remaining 1 tablespoon of sugar and continue beating until stiff, glossy peaks form.
  5. Gently fold the melted chocolate into the egg yolk mixture in thirds until combined.
  6. In thirds, fold a spoonful of whipped egg whites into the chocolate mixture, then fold in whipped cream.
  7. Spoon the mousse into serving glasses or cups.
  8. Cover and refrigerate for at least 3 hours. Sprinkle with a pinch of sea salt flakes just before serving.
