  1. Slice the sausage and shred the cabbage. Dice the onion and mince the garlic.
  2. Heat olive oil in a large pot or Dutch oven over medium heat.
  3. Add the sausage and cook until browned. Ensure sausage is cooked to safe internal temperature.
  4. Add the diced onion and minced garlic to the pot and cook until softened.
  5. Add the shredded cabbage, thyme, bay leaf, broth, and tomato products. Stir to combine.
  6. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 40-45 minutes, or until the cabbage is very tender. Remove bay leaf before serving.
  7. Season with salt and pepper. Serve hot.
