Flavor-Packed Chicken Enchilada Bake
A delicious Mexican-inspired dinner featuring a layered chicken and cheese enchilada bake with enhanced flavors from spices and fresh toppings.
Ingredients
- 1.5 lbs, boneless and skinless Chicken Breast
- 6 7" Tortillas
- 1 jar (642 mL), your favorite flavor Salsa
- 1.5 cups, Mexican blend or cheddar Shredded Cheese
- 2 tbsp Olive Oil
- 1 tbsp Chili Powder
- 1 tsp Cumin
- 1/2 tsp Garlic Powder
- 1/2 medium, chopped Onion
Instructions
- Preheat oven to 375°F (190°C).
- Cook chicken breast using your preferred method (boiling, baking, or poaching). Shred with two forks.
- Heat olive oil in a pan over medium heat. Add chopped onion and cook until translucent. Add shredded chicken, chili powder, cumin, and garlic powder. Cook for 5 minutes, stirring occasionally.
- Spread a thin layer of salsa in a baking dish.
- Fill each tortilla with chicken mixture and cheese. Roll up tightly and place seam-down in the baking dish.
- Pour remaining salsa evenly over the enchiladas and top with remaining shredded cheese.
- Bake for 25-30 minutes, or until heated through and cheese is melted and bubbly. Let stand for 5 minutes before serving.
