Baked Salmon with Roasted Asparagus and Lemon-Herb Crust
Tender baked salmon with roasted asparagus, topped with a flavorful lemon-herb crust.
Ingredients
- 2 portions (150g each) Fresh Atlantic Salmon Portions
- 1 bunch Fresh Asparagus
- 2 tbsp Olive Oil
- 1/2 (zest and juice) Lemon
- 1 tbsp Fresh Parsley (chopped)
- 1 clove Garlic (minced)
- 1/4 tsp Salt
- 1/4 tsp Black Pepper
Instructions
- Preheat oven to 425°F (220°C).
- Wash and trim the asparagus. Toss with 1 tbsp of olive oil, salt, and pepper. Spread on a baking sheet.
- In a small bowl, combine lemon zest, lemon juice, chopped parsley, minced garlic, salt, and pepper.
- Place salmon portions on a separate piece of foil on the baking sheet.
- Drizzle the remaining olive oil over the salmon portions, then top each portion with the lemon-herb mixture, pressing lightly to adhere.
- Bake for 12-15 minutes, or until salmon is cooked through and flakes easily with a fork. The asparagus should be tender.
- Serve immediately.
