Mediterranean Chickpea Salad Pitas
Easy and healthy chickpea salad served in pita bread, seasoned with Mediterranean flavors.
Ingredients
- 1 can (540 ml), drained and rinsed Canned Chickpeas
- 1/2, diced Cucumber
- 1/2 cup Greek Yogurt
- 1/4 cup, finely diced Red Onion
- 1 tbsp, fresh Lemon Juice
- 2 Pita Bread
- 1 tbsp, chopped Mint
- 1 tbsp Olive Oil
Instructions
- Drain and rinse chickpeas thoroughly.
- Dice cucumber and finely dice red onion.
- Chop mint finely.
- In a bowl, mix chickpeas, cucumber, red onion, mint, yogurt, lemon juice, and olive oil.
- Season with salt and pepper to taste.
- Spoon chickpea salad into pita bread.
- Serve immediately.
