Roasted Chicken Breast and Potato Bowl with Herbs

Ingredients
- 150g Chicken Breast
- 200g Yellow Mini Potatoes
- 1 tbsp Olive Oil
- 1/4 tsp, dried Rosemary
- 1/4 tsp, dried Thyme
- to taste Salt
- to taste Pepper
Instructions
- Preheat oven to 400°F (200°C).
- Cut potatoes into smaller, evenly sized pieces.
- In a bowl, toss potatoes and chicken breast with olive oil, rosemary, thyme, salt, and pepper.
- Spread the mixture in a single layer on a baking sheet.
- Bake for 25 minutes, or until chicken is cooked through (internal temperature of 165°F/74°C) and potatoes are tender.
- Serve in a bowl immediately.
