Britannia Biscuit Breakfast Kheer
A quick and comforting Indian-inspired breakfast kheer featuring biscuits.
Ingredients
- 100 g Biscuits
- 2 cups Whole Milk
- 2-3 tbsp Sugar
- 1/2 tsp Cardamom Powder
- A pinch, soaked in 1 tbsp warm milk Saffron Strands
- 2 tbsp Chopped Almonds
- 1 tbsp Raisins
- 1 tsp Ghee
Instructions
- Crush the biscuits into small pieces. Reserve a few for garnish.
- Heat ghee in a saucepan over medium heat. Add the crushed biscuits and sauté for 2-3 minutes until lightly golden. This enhances their flavor.
- Pour in the milk and stir well to combine, ensuring no lumps form.
- Add sugar, cardamom powder, and saffron strands soaked in warm milk. The saffron milk will impart a richer color and flavor.
- Simmer for about 15 minutes, stirring frequently to prevent sticking, until the kheer thickens. For a creamier texture, mash some of the biscuits against the side of the pan as it simmers.
- Stir in chopped almonds and raisins during the last 5 minutes of cooking.
- Pour the kheer into serving bowls. Garnish with reserved biscuit pieces and additional chopped nuts.
- Serve warm or chilled.
