Italian Tomato & Potato Soup with Fresh Herbs

  1. Dice tomatoes and potatoes into 1/2-inch cubes.
  2. Dice onion and mince garlic.
  3. Heat olive oil in a pot over medium heat. Add onion and garlic and sauté until softened, about 3-4 minutes.
  4. Add tomatoes and potatoes and cook for a few minutes, stirring occasionally.
  5. Pour in vegetable broth, add oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  6. Stir in fresh basil just before serving. Optionally, drizzle a teaspoon of balsamic glaze over the soup for added flavor. Serve hot.
