Italian Tomato & Potato Soup with Fresh Herbs
Comforting Italian-style soup featuring tomatoes, potatoes, aromatic herbs and a touch of balsamic glaze.
Ingredients
- 1 medium, crushed or diced Tomatoes
- 1 medium, Yukon Gold or red potatoes Potatoes
- 2 cups, low sodium Vegetable broth
- 1 tbsp Olive oil
- 1/4 medium, diced Onion
- 1 clove, minced Garlic
- 1/2 tsp Dried oregano
- 1 tbsp chopped Fresh basil
- 1 tsp (optional) Balsamic glaze
- to taste Salt
- to taste Pepper
Instructions
- Dice tomatoes and potatoes into 1/2-inch cubes.
- Dice onion and mince garlic.
- Heat olive oil in a pot over medium heat. Add onion and garlic and sauté until softened, about 3-4 minutes.
- Add tomatoes and potatoes and cook for a few minutes, stirring occasionally.
- Pour in vegetable broth, add oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Stir in fresh basil just before serving. Optionally, drizzle a teaspoon of balsamic glaze over the soup for added flavor. Serve hot.
