Canadian Cottage Cheese Pancakes
Fluffy and protein-packed pancakes made with cottage cheese and a hint of cinnamon, enhanced with lemon zest and a touch of nutmeg.
Ingredients
- 1.5 cups Cottage cheese (low sodium)
- 3 large Eggs
- 1/2 cup Rolled oats
- 1/2 tsp Cinnamon
- 1 tsp Baking powder (low sodium)
- 1/2 tsp Vanilla extract
- 1 tsp Lemon zest
- 1/4 tsp Ground nutmeg
Instructions
- In a blender, combine cottage cheese, eggs, rolled oats, cinnamon, baking powder, vanilla extract, lemon zest, and nutmeg.
- Blend until smooth, ensuring no large oat particles remain.
- Let the batter rest for 5 minutes to allow oats to absorb the liquid.
- Heat a lightly oiled griddle or frying pan over medium-low heat. Maintaining a lower temperature helps to cook the pancakes evenly and prevent burning.
- Pour 1/4 cup of batter onto the hot griddle for each pancake.
- Cook for 3-4 minutes per side, or until golden brown and cooked through. Flip carefully to avoid breaking the pancakes.
- Serve immediately with your favorite toppings. Consider fresh berries, a drizzle of maple syrup (in moderation due to sodium content), or a dollop of Greek yogurt for added protein and flavor.
