Spanish Chickpea Salad Sandwich
A vegetarian sandwich filled with a flavorful chickpea salad inspired by Spanish flavors.
Ingredients
- 1 can (540ml), drained and rinsed Canned Chickpeas
- 1/2 cup, diced Red Bell Pepper
- 1/4 cup, finely chopped Red Onion
- 2 cups, chopped Bunched Spinach
- 2 tbsp Lemon Juice
- 1 tbsp Extra Virgin Olive Oil
- 1/2 tsp Smoked Paprika
- 2 tbsp Light Margarine
- 4 slices Bread Slices
- 1 tbsp, chopped Fresh Parsley
Instructions
- In a bowl, mash the chickpeas lightly with a fork. Leave some whole for texture.
- Add diced red bell pepper, red onion, and chopped spinach to the mashed chickpeas.
- In a separate small bowl, whisk together lemon juice, extra virgin olive oil, and smoked paprika.
- Pour the dressing over the chickpea mixture. Add Fresh Parsley and stir to combine.
- Spread Light Margarine on Bread Slices. Fill each slice with chickpea salad and enjoy immediately.
