  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, celery, and carrots and cook until softened, about 8 minutes.
  3. Add garlic and cook for 1 minute, until fragrant.
  4. Stir in broth, white beans, and bay leaf. Bring to a simmer.
  5. Add kale and cook until wilted, about 5 minutes.
  6. While soup is simmering, grill bread slices until toasted.
  7. Rub each slice of grilled bread with a clove of garlic.
  8. Remove bay leaf before serving. Serve soup with grilled bread.
