White Bean & Kale Soup with Grilled Bread
A hearty and healthy soup featuring white beans, kale, and vegetables, served with grilled bread rubbed with garlic.
Ingredients
- 2 cans (540 mL), drained and rinsed Canned White Beans
- 4 cups Broth
- 1 medium, chopped Onions
- 2 stalks, chopped Celery
- 2 medium, chopped Carrots
- 6 cups, chopped Kale
- 3 cloves, minced Garlic
- 1 loaf, sliced French or Italian Bread
- 2 tbsp Olive oil
- 1 Bay leaf
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, celery, and carrots and cook until softened, about 8 minutes.
- Add garlic and cook for 1 minute, until fragrant.
- Stir in broth, white beans, and bay leaf. Bring to a simmer.
- Add kale and cook until wilted, about 5 minutes.
- While soup is simmering, grill bread slices until toasted.
- Rub each slice of grilled bread with a clove of garlic.
- Remove bay leaf before serving. Serve soup with grilled bread.
