Tomato and Spinach Quesadillas with Black Beans
Quick and easy quesadillas filled with tomato, spinach, and black beans, perfect for a weeknight dinner.
Ingredients
- 0.5 lb Spinach
- 3 medium Tomatoes
- 6 (6-inch) Tortillas
- 1 can (15 oz), rinsed and drained Black Beans
- 1.5 cups shredded Low-Fat Cheddar Cheese
- 1/2 tsp Chili Powder
- 1 tbsp Olive Oil
- 1/2 cup (for serving) Salsa
Instructions
- Dice tomatoes and roughly chop spinach.
- In a bowl, mix spinach, tomatoes, black beans, cheese, and chili powder.
- Heat olive oil in a skillet over medium heat.
- Spread mixture evenly over half of each tortilla.
- Fold tortillas in half and cook in the skillet until golden brown and cheese is melted, about 3-4 minutes per side.
- Cut into wedges and serve hot with salsa.
