Saffron-Infused Vegetable Biryani with Raita

  1. Soak basmati rice for 30 minutes in water infused with a pinch of saffron strands. This will impart a beautiful color and aroma.
  2. Drain rice and set aside.
  3. Dice peppers, cauliflower, onions, and mince garlic. Sauté in vegetable oil with a bay leaf until slightly softened.
  4. Add garam masala and turmeric powder. Sauté for another minute to release their fragrances.
  5. Add rice and gently stir to combine with the vegetables and spices.
  6. Add 2 cups of hot water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until rice is cooked and water is absorbed.
  7. Remove from heat and let it sit, covered, for 10 minutes to allow the flavors to meld.
  8. Remove the bay leaf before serving.
  9. Mix yogurt and cilantro for the raita. Serve raita with biryani, garnished with additional fresh cilantro.
