Saffron-Infused Vegetable Biryani with Raita
Aromatic basmati rice dish with an array of vegetables, saffron, and traditional spices, complemented by a cooling raita.
Ingredients
- 1 cup Basmati Rice
- 1/2 of each Green & Red Peppers
- 1/4 head Cauliflower
- 1 medium Onion
- 2 cloves Garlic
- 1 cup Yogurt
- 1 tbsp Garam Masala
- 1/2 tsp Turmeric Powder
- 2 tbsp Vegetable Oil
- 2 tbsp Cilantro
- Pinch Saffron Strands
- 1 Bay Leaf
Instructions
- Soak basmati rice for 30 minutes in water infused with a pinch of saffron strands. This will impart a beautiful color and aroma.
- Drain rice and set aside.
- Dice peppers, cauliflower, onions, and mince garlic. Sauté in vegetable oil with a bay leaf until slightly softened.
- Add garam masala and turmeric powder. Sauté for another minute to release their fragrances.
- Add rice and gently stir to combine with the vegetables and spices.
- Add 2 cups of hot water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until rice is cooked and water is absorbed.
- Remove from heat and let it sit, covered, for 10 minutes to allow the flavors to meld.
- Remove the bay leaf before serving.
- Mix yogurt and cilantro for the raita. Serve raita with biryani, garnished with additional fresh cilantro.
