Chorizo & Egg Scramble Bowl
A hearty and flavorful protein-rich dinner bowl with chorizo, scrambled eggs, black beans and a drizzle of salsa.
Ingredients
- 50g Diced Chorizo
- 3 Eggs
- 1/4 cup, canned Black Beans
- 1 tbsp Salsa
- 1/4 cup Shredded Cheese
- Pinch Chili Powder
Instructions
- In a bowl, whisk the eggs with a pinch of chili powder. The chili powder enhances the flavor of the eggs.
- Scramble the eggs in a non-stick pan and set aside.
- In the same pan, cook the chorizo until crispy, rendering some of the fat. Drain excess fat if desired.
- Add black beans to the pan and heat through.
- Combine eggs, chorizo, and black beans in a bowl.
- Top with shredded cheese and salsa. Serve immediately.
