  1. If potatoes are not already cooked, boil until tender then dice.
  2. In a bowl, gently combine boiled potatoes, tomatoes, chickpeas, red onion, dairy-free mayonnaise, lemon juice, fresh dill, and Kalamata olives.
  3. Season with salt and pepper to taste.
  4. Mix well, being careful not to mash the potatoes.
  5. Spoon the potato salad into lettuce leaves.
  6. Serve immediately, or chill for later.
