Mediterranean Potato Salad Lettuce Wraps
A lighter take on potato salad with a Mediterranean twist, served in crisp lettuce wraps.
Ingredients
- 1 cup diced, boiled until tender Potatoes
- 1/2 cup diced Tomatoes
- 1/2 cup, drained and rinsed Chickpeas
- 4 large leaves Iceberg Lettuce
- 2 tbsp Dairy-Free Mayonnaise
- 1 tbsp finely diced Red Onion
- 1 tsp Lemon Juice
- 1 tbsp chopped Fresh Dill
- 2 tbsp, pitted and halved Kalamata Olives
- to taste Salt
- to taste Black Pepper
Instructions
- If potatoes are not already cooked, boil until tender then dice.
- In a bowl, gently combine boiled potatoes, tomatoes, chickpeas, red onion, dairy-free mayonnaise, lemon juice, fresh dill, and Kalamata olives.
- Season with salt and pepper to taste.
- Mix well, being careful not to mash the potatoes.
- Spoon the potato salad into lettuce leaves.
- Serve immediately, or chill for later.
