Italian Sausage and Peppers Skillet
A quick and easy low-carb Italian skillet featuring sausage, bell peppers, and onions cooked in a light tomato sauce with Italian herbs.
Ingredients
- 1 lb Italian Sausage (low sodium, chicken or turkey)
- 3 medium Bell Peppers (various colors, sliced)
- 1 medium Onion (sliced)
- 1 (14.5 oz) can Canned Diced Tomatoes (no salt added, fire-roasted preferred)
- 4 cloves Garlic (minced)
- 2 tbsp Olive Oil
- 1 tbsp Dried Italian Herbs (no salt added)
- 1/4 tsp Red Pepper Flakes (optional, for heat)
- 2 tbsp Fresh Basil (chopped, for garnish)
- 1/2 tsp Black Pepper
Instructions
- Heat olive oil in a large skillet over medium-high heat. Using medium-high heat will help to brown the sausage and vegetables more effectively, enhancing their flavor.
- Add sliced Italian sausage, bell peppers, and onions to the skillet.
- Cook until sausage is browned and vegetables are tender-crisp, about 8-10 minutes, stirring occasionally.
- Add minced garlic and red pepper flakes (if using) and cook for another minute until fragrant, ensuring not to burn the garlic.
- Pour in canned diced tomatoes and sprinkle with Italian herbs and black pepper.
- Stir well to combine and bring to a simmer.
- Reduce heat to low, cover, and let simmer for 15 minutes, allowing the flavors to meld. Uncover during the last 5 minutes to reduce the sauce slightly.
- Garnish with fresh chopped basil before serving.
- Serve hot on its own, over cauliflower rice, or with a side of zucchini noodles for a complete low-carb meal. Ensure the sausage reaches a safe internal temperature of 160°F (71°C).
