Mexican Chickpea & Potato Salad with Lime Dressing
A zesty Mexican-inspired salad with potatoes, chickpeas, tomatoes, and a tangy lime dressing.
Ingredients
- 1 medium Potatoes
- 1/2 cup Chickpeas
- 1/2 cup Tomatoes
- 1/4 cup, diced Red onion
- 2 tbsp, chopped Cilantro
- 2 tbsp Lime juice
- 1 tbsp Olive oil
- 1/2 tsp Chili powder
- 1/4 tsp Cumin
- 1/4 tsp Smoked paprika
- To taste Salt and pepper
Instructions
- Boil the potatoes until tender, about 15-20 minutes. Drain and let cool completely before dicing.
- Dice the potatoes and tomatoes.
- In a bowl, combine potatoes, chickpeas, tomatoes, and red onion.
- In a separate small bowl, whisk together lime juice, olive oil, chili powder, cumin, smoked paprika, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine. Ensure the potatoes are not warm when mixing, as this can make the salad mushy.
- Garnish with cilantro. For a richer flavor, chill for at least 30 minutes before serving.
