  1. Rinse the red lentils under cold water until the water runs clear.
  2. Heat oil or ghee in a pot. Add chopped onion, minced ginger, and garlic. Sauté until golden brown.
  3. Add chopped carrots, curry powder, and garam masala. Sauté for 2-3 minutes to release their aroma.
  4. Add rinsed red lentils and vegetable broth. Bring to a boil, then reduce heat to low and simmer for 30-35 minutes, or until lentils are cooked and the vegetables are tender.
  5. Stir in coconut milk and simmer for another 5 minutes.
  6. Season with salt to taste and stir in lemon juice.
  7. Garnish with chopped cilantro before serving.
