Curried Carrot and Lentil Soup
A hearty and flavorful soup with carrots, lentils, and Indian spices.

- Rinse the red lentils under cold water until the water runs clear.
- Heat oil or ghee in a pot. Add chopped onion, minced ginger, and garlic. Sauté until golden brown.
- Add chopped carrots, curry powder, and garam masala. Sauté for 2-3 minutes to release their aroma.
- Add rinsed red lentils and vegetable broth. Bring to a boil, then reduce heat to low and simmer for 30-35 minutes, or until lentils are cooked and the vegetables are tender.
- Stir in coconut milk and simmer for another 5 minutes.
- Season with salt to taste and stir in lemon juice.
- Garnish with chopped cilantro before serving.
