Elevated Open-Faced Chicken Breast Sandwiches with Fried Egg
A sophisticated Canadian-style lunch featuring toasted artisanal bread topped with pan-seared chicken breast, melted cheese, and a perfectly fried egg.
Ingredients
- 6 slices, sourdough or multigrain Artisanal Bread Slices
- 6 slices, thinly sliced and pan-seared Chicken Breast
- 3/4 cup, Gruyere or sharp cheddar Shredded Cheese
- 3 large BURNBRAE FARMS Eggs
- 2 tbsp, divided Butter
- To taste Salt
- To taste Black Pepper
- 1 sprig (optional) Fresh Thyme
Instructions
- Toast bread slices until golden brown.
- Heat 1 tbsp butter in a skillet over medium heat. Season chicken breast slices with salt and pepper and pan-sear until cooked through, about 3-4 minutes per side. Remove from skillet.
- Top each slice of toasted bread with pan-seared chicken breast and shredded cheese. Place under a broiler until cheese is melted and bubbly.
- In the same skillet, melt remaining 1 tbsp butter. Fry the eggs to your liking (sunny-side up or over-easy). Season with salt and pepper. Add fresh thyme to butter when cooking egg for flavor boost.
- Place a fried egg on top of each sandwich. Serve immediately.
