  2. Heat 1 tbsp butter in a skillet over medium heat. Season chicken breast slices with salt and pepper and pan-sear until cooked through, about 3-4 minutes per side. Remove from skillet.
  3. Top each slice of toasted bread with pan-seared chicken breast and shredded cheese. Place under a broiler until cheese is melted and bubbly.
  4. In the same skillet, melt remaining 1 tbsp butter. Fry the eggs to your liking (sunny-side up or over-easy). Season with salt and pepper. Add fresh thyme to butter when cooking egg for flavor boost.
  5. Place a fried egg on top of each sandwich. Serve immediately.
