Egg and Potato Scramble with Red Pepper
A simple, hearty scramble made with potatoes, eggs, and colorful bell peppers, seasoned for a flavorful and nutritious dinner.
Ingredients
- 1 large, diced Sweet Peppers
- 2 medium, diced Potatoes
- 6 large Eggs
- 1/4 cup, chopped Onion
- 1 tbsp Olive Oil
- 1/2 tsp Garlic Powder
- 1/4 tsp Smoked Paprika
- To taste Salt and Black Pepper
- 1 tbsp, chopped (for garnish) Fresh Parsley
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced potatoes and onions to the skillet and cook until potatoes are tender and slightly browned, about 10 minutes. If potatoes start to stick, add a tablespoon of water to the skillet.
- Add diced bell peppers and cook for another 5 minutes, until peppers are softened.
- Season the vegetables with garlic powder and smoked paprika.
- In a separate bowl, whisk eggs with salt and black pepper.
- Pour the whisked eggs over the potato and pepper mixture in the skillet.
- Cook, stirring occasionally, until eggs are set but still slightly moist. Avoid overcooking to keep the eggs tender.
- Garnish with fresh parsley and serve immediately.
