Spiced Lentil and Vegetable Dosa
Savory lentil and vegetable dosa, spiced with traditional Indian flavors, provides a protein-packed vegan breakfast.
Ingredients
- 1 cup red lentils Lentils
- 2 cloves Garlic
- 1 inch piece Ginger
- 1 tsp Turmeric powder
- 1/2 tsp Chili powder
- 1 cup mixed vegetables (carrots, peas, beans) Mixed Vegetables
- 1 cup chopped Spinach
- 3 tbsp Vegetable Oil
- to taste Salt
- to taste Black Pepper
- 1/2 cup Rice Flour
- 1/4 cup Urad Dal Flour
- 1.5 cups Water
- Pinch Asafoetida (Hing)
- 1/2 tsp Cumin Seeds
Instructions
- Soak red lentils overnight. Grind into a smooth batter with garlic, ginger, and asafoetida.
- Add turmeric powder, chili powder, rice flour, urad dal flour, salt, and pepper to the lentil batter. Mix well. Let batter rest for at least 15 minutes to allow the flours to hydrate.
- Heat 1 tbsp of vegetable oil in a small pan, add cumin seeds and let them splutter. Add this tempering to the batter.
- Heat a lightly oiled griddle or non-stick pan over medium heat.
- Pour a ladleful of batter onto the pan and spread into a thin circle.
- Sprinkle mixed vegetables and spinach over the dosa. Gently press the vegetables into the batter.
- Cook until golden brown and crispy on both sides, about 3-4 minutes per side. Drizzle with oil if needed.
- Serve hot with vegan yogurt or chutney.
