  1. Cook pasta according to package directions. Reserve 1/2 cup of pasta water before draining.
  2. While pasta is cooking, mince garlic. Sauté in olive oil until fragrant.
  3. Add shrimp and cook until pink and cooked through.
  4. Add chopped tomatoes and cook until softened.
  5. Stir in spinach and cook until wilted.
  6. Toss with cooked pasta and add a splash of reserved pasta water to create a light sauce. Stir in lemon juice and red pepper flakes.
  7. Garnish with fresh parsley. Serve immediately.
