Spinach and Tomato Pasta with Garlic Shrimp
A light and flavorful pasta dish with spinach, tomatoes, garlic shrimp, and a drizzle of olive oil.
Ingredients
- 300g, peeled and deveined Shrimp
- 1 lb Spinach
- 3 medium Tomatoes
- 300g (whole wheat) Pasta
- 4 cloves Garlic
- 3 tbsp Olive Oil
- 1/4 tsp (adjust to taste) Red Pepper Flakes
- 1 tbsp Lemon Juice
- 2 tbsp chopped (for garnish) Fresh Parsley
Instructions
- Cook pasta according to package directions. Reserve 1/2 cup of pasta water before draining.
- While pasta is cooking, mince garlic. Sauté in olive oil until fragrant.
- Add shrimp and cook until pink and cooked through.
- Add chopped tomatoes and cook until softened.
- Stir in spinach and cook until wilted.
- Toss with cooked pasta and add a splash of reserved pasta water to create a light sauce. Stir in lemon juice and red pepper flakes.
- Garnish with fresh parsley. Serve immediately.
