  1. Cook bacon in a skillet until crispy. Remove bacon, drain on paper towels, crumble, and set aside.
  2. In the same skillet, heat olive oil over medium heat. Add sliced bell peppers, chili powder, and cumin. Sauté until the peppers are slightly softened, about 5-7 minutes.
  3. Lay tortillas flat and sprinkle half of each tortilla with shredded cheese, crumbled bacon, and sautéed bell peppers.
  4. Fold the tortilla in half, pressing gently.
  5. Cook in a clean skillet or on a griddle over medium heat for 2-3 minutes per side, or until golden brown and the cheese is fully melted and gooey.
  6. Remove from the skillet, let cool slightly, and cut each quesadilla into wedges. Serve immediately.
