Bacon & Bell Pepper Quesadillas
A simple and flavorful lunch featuring crispy bacon, sweet bell peppers, and melted cheese in warm tortillas.
Ingredients
- 6 slices Bacon
- 1 cup, sliced Mini Bell Peppers
- 1.5 cups, shredded (Cheddar, Monterey Jack, or a blend) Cheese
- 6 Corn Tortillas
- 1 tbsp Extra Virgin Olive Oil
- 1/2 tsp Chili Powder
- 1/4 tsp Cumin
Instructions
- Cook bacon in a skillet until crispy. Remove bacon, drain on paper towels, crumble, and set aside.
- In the same skillet, heat olive oil over medium heat. Add sliced bell peppers, chili powder, and cumin. Sauté until the peppers are slightly softened, about 5-7 minutes.
- Lay tortillas flat and sprinkle half of each tortilla with shredded cheese, crumbled bacon, and sautéed bell peppers.
- Fold the tortilla in half, pressing gently.
- Cook in a clean skillet or on a griddle over medium heat for 2-3 minutes per side, or until golden brown and the cheese is fully melted and gooey.
- Remove from the skillet, let cool slightly, and cut each quesadilla into wedges. Serve immediately.
