Masala Oats Upma with Mixed Vegetables
Savory oats cooked with traditional Indian spices and mixed vegetables, inspired by South Indian upma.
Ingredients
- 1/2 cup Lentils
- 2 cloves Garlic
- 1/2 cup chopped Mixed Bell Peppers
- 1 cup Rolled Oats
- 1/2 tsp Mustard Seeds
- 8-10 fresh Curry Leaves
- 1/2 tsp Turmeric Powder
- 1/4 tsp (adjust to taste) Red Chili Powder
- To taste Salt
- 1 tbsp Vegetable Oil
- 1 tsp Lemon Juice
Instructions
- Rinse lentils thoroughly and set aside.
- Heat oil in a pan, add mustard seeds. Let them splutter, then add curry leaves.
- Add chopped garlic and saute until fragrant (about 30 seconds).
- Add chopped mixed bell peppers and saute until slightly tender, about 3-4 minutes.
- Add rolled oats, turmeric powder, red chili powder, and salt. Roast for 3-4 minutes, stirring constantly, to enhance the flavor of the oats.
- Add 2 cups of boiling water. Bring to a simmer, then reduce heat and cook, covered, until the oats are soft and the water is absorbed, about 5-7 minutes. Stir occasionally to prevent sticking.
- Stir in lemon juice. Serve hot, garnished with fresh cilantro if available.
