Masala Oats Upma with Mixed Vegetables

  1. Rinse lentils thoroughly and set aside.
  2. Heat oil in a pan, add mustard seeds. Let them splutter, then add curry leaves.
  3. Add chopped garlic and saute until fragrant (about 30 seconds).
  4. Add chopped mixed bell peppers and saute until slightly tender, about 3-4 minutes.
  5. Add rolled oats, turmeric powder, red chili powder, and salt. Roast for 3-4 minutes, stirring constantly, to enhance the flavor of the oats.
  6. Add 2 cups of boiling water. Bring to a simmer, then reduce heat and cook, covered, until the oats are soft and the water is absorbed, about 5-7 minutes. Stir occasionally to prevent sticking.
  7. Stir in lemon juice. Serve hot, garnished with fresh cilantro if available.
